The colour is uncompromisingly deep, with garnet tinges that is witnessing some development and maturity. The nose just confirms maturity, while remaining fresh and firm. Dark red fruits are still there but are joined by some leathery, undergrowth and tobacco notes. It is dry and a rather elegant style showing nice Cabernet verticality, tightness and stamina. 2010 was not the finest vintage for reds in Brda, but this Cabernet Sauvignon clearly shows that with some sense for the Mother Nature, many things are possible. It is close to its plateau, but will give pleasure for another decade, even two.
Late harvest, hand picked, short vine-to-fermentation times (max. 2h). Primary fermentation in large tanks on natural yeasts obtained from the same pre-harvested grapes (5%). Macerated 3 to 4 weeks until the end of fermentation when the pomace cover settles and naturally clears the wine. The wine is thus ready for a long and fulfilling active life in barrique casks , naturally without racking. Secondary fermentation completed in barrique barrels on the lees, no racking. No sulphur or any other preservatives used before bottling, thus the wine can complete all its natural processes and become naturally stable, ready to last a human lifetime.
Matured 4 years in 180 liter Slovenian oak barrels.
Bottle age 6 months in 0.75 l bottles.
